Mango with Sticky Rice

If you haven’t tried this, you’re missing out in life. I’d choose this dessert over any chocolate! (I’m kidding). Mango has got to be my favorite fruit in the world. Next will be lychee, oranges, pineapples and so on. I haven’t come across a fruit I didn’t like. I grew up eating fruits as desserts, so maybe I am biased about that with chocolates. Don’t get me wrong I love chocolates as well, but not as much as fruits. Okay, I'm gonna stop rambling about my fruit opinions. That’s not why we are here ladies and gentlemen! I’m here to convince you to try this recipe. Easy, filling, and good. I can already hear someone complain... "Eww, rice for dessert?" Okay, first of all, it’s not eww.. and second, it has mango in it and it’s sweet so that’s a dessert. At least that counts as a dessert in my world. Don’t go crazy eating tho, this stuff gets you really REALLY full if you eat too much. Don’t blame me for your food coma. I just share recipes here. No harm intended.


1C Glutinous Sweet Rice

2C Coconut Milk

3T Sugar

1t Salt

1ea Mango, sliced

1T Sesame Seeds, toasted


Rinse the sweet rice with cold water until the water runs clear. Drain well in a sieve. In a pot, heat water about 2 inches deep, make sure it’s simmering slowly but not boiling. Set the sieve over the pot, making sure the strainer doesn’t touch the water. Put a lid on and let it steam until the rice is cooked for around 15 to 20 minutes. While the rice is cooking, heat up the coconut milk and then add sugar and salt until they're dissolved, set aside. Once the rice is cooked, cool down a little bit and then mix the coconut sauce with the rice. Serve with sliced mango on the side. Garnish with toasted sesame seeds and more coconut sauce on top.
