Sautéed Green Beans

Green beans. The all-star favorite side dish. Steam, boil, grill, or sautée them. They’re so versatile and always holding up good! My favorite way to cook them is by blistering them in a really hot pan, but I don’t feel like smoking our apartment today.. so here we are! Simply sautéed, but still great! Pro tip - while the green beans are still hot, you can use a Microplane to shave the cheese if you want it to melt on top of the beans. Uhmm... I should’ve done that...
2T Vegetable Oil
1T Garlic, sliced
2T Butter
2T Shallots, minced
1# Green Beans
Salt
Pepper
Parmesan
Chili Flakes
Blanche and shock green beans until it softens but still firm. Drain on a paper towel to dry. In a pan, heat vegetable oil and cook garlic in low heat until light golden brown. Drain the oil and place garlic on a paper towel. In the same pan, add a little bit of the garlic oil and butter. When the butter starts to foam up, add the shallots and saute until it starts to soften up. Add the green beans and cook for a few minutes. Season with salt and pepper. Garnish with garlic, shaves of parmesan, and chili flakes.
