Caramelizing onions truly is a test of patience. Cooking it low and slow transforms the flavor of the onion into a sweet and delectable treat. Just like with brown butter (which I’m obsessed with), caramelized onions gives another depth of flavor to a recipe. Of course, there are millions of dips readily available to be purchased. Sure, I still buy them, but it just tastes better when there’s a labor of love involved. In my opinion, making something from scratch and seeing how a recipe comes together is more satisfying to me than buying pre-made food that I know I can make at home.  Good things take time and that includes cooking onions too.

8T Butter

2# Sweet Onions, sliced

1T Garlic, minced

1 1/2C (cooked) Cannellini Beans, rinsed and drained

1/2C Sour Cream

2T Lemon Juice

1t Chives, chopped

Salt

Pepper

Olive Oil

Lemon Zest

Pita Bread

Melt butter in a saute pan and then add onions. Season with salt and pepper. Cook the onions in low heat, stirring often until tender. Add the garlic and keep cooking until the onions turn golden brown and caramelized for about 30 to 45 minutes. In a food processor, blend onions, cannellini beans, sour cream, and lemon juice until smooth. While blending, add a little bit of olive oil if needed to loosen up the consistency. Adjust the seasoning with salt and pepper. Drizzle olive oil on top, then garnish with chives and lemon zest. Serve with warm pita bread on the side.
