My daily life as of right now has been revolving around playing animal crossing, grabbing snacks from the fridge, and wondering if I should do something productive or continue playing until it’s bedtime again. Just games and food. Is anybody out there obsessed with animal crossing as I am? Because I am pouring my whole life into it and I need some weird reassurance that I am not alone on this. After playing for hours and hours, I need to go back to reality. That's when I cook and get my butt off the couch. To my fellow gamers and couch potatoes, let's do some lettuce wraps, shall we?

For Pickled Shallots:

1/2C Apple Cider Vinegar

1/4C Water

2T Sugar

1t Salt

1C Shallots, sliced

Mix apple cider vinegar, water, sugar, and salt in a saucepan. Heat up until sugar and salt are dissolved and liquid starts to simmer. Pour over shallots while the pickling liquid is still hot. Let it cool down at room temperature.

For Dipping Sauce:

1T Garlic, minced

2T Fish Sauce

2T Mirin

2T Sweet Chili Sauce

1T Apple Cider Vinegar

Black Pepper

Whisk everything and adjust black pepper to taste.

2# Ground Beef

1/4C Onions, small diced

2T Garlic, minced

2C Mushrooms, small diced

Vegetable Oil

Salt

Pepper

Soy Sauce

Iceberg, Bibb, or Leaf Lettuce

1C Carrots, julienne

1C Cucumber, julienne

Cilantro

In a large pan, saute ground beef with vegetable oil until it turns brown. When most of the liquid from the beef has evaporated, season with a little salt and pepper. Remove the beef from the pan, add a little bit more vegetable oil, and then saute onions, garlic, and mushrooms until they become tender. Add the beef back in the pot and season with soy sauce to taste. To assemble, serve beef over lettuce, top with carrots, cucumber, pickled shallots, dipping sauce, and cilantro.
