Kimchi Spam Fried Rice

When the hubby has an intense love with spam and rice, I deliver. Any kind of fried rice is his comfort food. That's why it's so easy to feed him! Or I am just very lucky to marry someone who isn’t a picky eater. One day, I’ll just cook a ton of rice with the intention of cooking a variety of fried rice for the whole week. Just rice bowls, all day, every day. Then, I’ll open a restaurant with just every fried rice combination I could come up with. Rice dreamland is what I would call it.

1/2can Spam, small diced

1/2can Spam, sliced

2ea Eggs

1T Garlic, minced

2T Onions, small diced

1/2C Kimchi, rough chopped

4C (one day old) Rice

1/2C Edamame, cooked

3T Soy Sauce

2t Sesame Oil

Vegetable Oil

Salt

Pepper

Nori

Sesame Seeds

In a wok or big saute pan, cook the diced spam first until golden brown and set aside. Next, cook the sliced spam until golden brown on both sides and set aside. Place the spam in a paper towel-lined plate to remove excess oil. In a bowl whisk the eggs and cook at the same pan until scrambled, then set aside. To start the fried rice, using the same pan, add a little vegetable oil and start sautéing the garlic and onion until the garlic starts to turn golden brown and the onion is translucent. Then add the kimchi and saute for a few minutes. Add the rice making sure to break apart the big lumps. Once the rice is hot and toasty, add the edamame, small diced spam, eggs, and soy sauce. Once everything is mix together, turn off the heat and add the sesame oil. Adjust the seasoning with more soy sauce or sesame oil to your preference. Use salt and pepper if needed. Serve with spam, kimchi, nori, and garnish with sesame seeds.
