Strawberry Mojito
Chi-town summertime is here. It's hot. All I want to do is eat a Chicago hotdog, bike along the lake, and gulp down a refreshing alcoholic beverage until the sun sets and the cool breeze of the summer night hugs me to goodnight. Repeat every day until winter comes knocking on the door again. Cheers!
For Strawberry Syrup:
1C Strawberries, medium dice
1/2C Sugar
1/2C Water
Mix everything in a pot. Cook until the sugar dissolves and the strawberries are tender. Strain and let the syrup cool before using.
6ea Mint Leaves
2oz Strawberry Syrup
2oz Lime Juice
2oz White Rum
2ea Ice Cubes
1ea Lime, sliced
1ea Strawberry, sliced
Club Soda
Muddle the mint leaves until fragrant. Add the strawberry syrup, lime juice, white rum, and ice. Stir and then add slices of lime and strawberries. Top it off with club soda and garnish with a strawberry, lime, and mint.
