Tomato Toast
Something light and yummy to snack on! Chicago Summer means tomatoes are in season! Gotta grab those heirlooms before summer ends.
For Pesto:
1C Basil Leaves
1/4C Parmesan Cheese, grated
1ea Garlic Clove
1/2t Pine Nuts
1/2C Olive Oil
Salt
Blend everything until combined. Adjust salt as needed.

Sourdough Bread
Burrata
Pesto
Heirloom Tomatoes, sliced
Salt
Pepper
Basil Leaves
Drizzle olive oil on the sourdough bread and toast on both sides. To assemble toast, tear the burrata on top of the sourdough bread. Drizzle pesto on top, then add slices of heirloom tomatoes. Season the tomatoes with salt and pepper. Drizzle more pesto on top and garnish with basil leaves.
