Turkey Sandwich
You know what it is. Leftover turkey just means turkey sandwich is about to happen. It's an unofficial thing to do a few days after thanksgiving. No need for explanation, it just happens. Some might even argue it's better than the turkey dinner itself. While I do like the traditional Thanksgiving turkey dinner... I do love how we can get creative with leftover foods. So my vote would be, leftover turkey for the WIN!!!
For Marinated Tomatoes:
1/2C Olive Oil
1C Cherry Tomatoes, halved
1T Basil, julienne
1T Oregano, minced
Salt
Pepper
Mix everything and adjust seasoning as needed. Let it marinate for 20 minutes at room temperature before serving.
For Herb Butter:
1stick Butter, room temperature
1t Rosemary, minced
1t Thyme, minced
1t Oregano, minced
2t Parsley, minced
Salt
Pepper
Mixed everything and adjust seasoning as needed.
For Herb Mayo:
1C Mayonnaise
1/2C Arugula, chopped
1T Basil, chopped
1T Oregano, minced
1T Parsley, minced
Salt
Pepper
Mix everything and adjust seasoning as needed.
Herb Butter
Ciabatta Bread
Herb Mayo
Mixed Greens
Turkey Slices
Mozzarella
Marinated Tomatoes
Bread & Butter Pickles
Spread some herb butter on the ciabatta bread and toast on the pan until golden brown. Build the sandwich with herb mayo, mixed greens, turkey slices, mozzarella, marinated tomatoes, and bread & butter pickles.
