Baconsilog
Classic Pinoy breakfast is the "Silog" which consists of day-old garlic fried rice, crispy fried egg, and a choice of protein. Each dish is the same set but the variation of the main protein changes along with the name of the dish. An example would be Tocilog. The main protein would be Tocino - which is a Filipino cured pork dish. Then add "Toci" with the Silog - now you have Tocilog as a dish! As for this recipe, Bacon is the main protein that I used, hence the name. Here's a breakdown for you.
Bacon - Main Protein
Si - Sinangag, basically day-old garlic fried rice.
Log - Itlog, fried egg typically sunny-side up with crispy edges.
Silogs are one of the best breakfasts in my hungry opinion.
For Garlic Fried Rice:
1/4C Canola Oil
1T Garlic, minced
1 1/2C Rice, day old and cooked
Salt
In a pan, heat the canola oil. Add the garlic and saute until golden brown. Then add the cooked rice and keep stirring until all the big lumps are gone and the rice is separating. Use more canola oil as needed and adjust the heat to prevent the garlic from burning. Season with salt.

1ea Eggs
1/4C Scallions, sliced
Garlic Fried Rice
Salt
Pepper
Starting with a cold pan, cook the bacon until crispy and set aside. Using the same pan, fry the egg in the bacon fat until crispy on the edge but the yolk is still runny. Serve the bacon and egg with the garlic fried rice and garnish with scallions.
