Cherry and Peach Popsicle
Just like any fruit I have left overs, whenever they are about to go bad, I try to utilize them so there is no food waste. I blend them and make juices or in this case into a popsicle!
1/2C Sweet Cherries, pitted
1/2C Rainier Cherries, pitted
2ea Peaches, pitted
3/4C Lemon Juice
1/4C Water
1/2C Sugar
5ea Mint Leaves
1/4C Mixed Cherries, pitted and sliced
Blend everything in the blender. Adjust sugar and lemon juice to your preference. Strain the mixture in a fine mesh strainer and pour inside the popsicle molds. Add mixed sliced cherries inside the popsicle mold for added texture. Freeze for 2 to 4 hours or until fully set.
