Inflation huh? I'm keeping my next few posts super simple because the budget is quite tight. The good thing is it doesn't take much to make a good meal. You can get away with this without the spicy mayo, but since I already have these items in my pantry, why not?

1/4C Canola Oil

8oz Shishito Peppers

Salt

Pepper

1ea Lime, wedges

Using a cast iron pan, heat it up on high heat until almost smoking. Add the canola oil and then add the shishito peppers. This should sizzle or else your pan is not hot enough. Once one side is blistered, move around the shishito peppers to char the other sides. Once the shishito peppers are tender and blistered, set aside and season with salt and pepper. Serve with lime wedges to squeeze all over the peppers and dip on spicy mayo.

For Spicy Mayo:

1/2C Mayonnaise

2T Chili Garlic Sauce

1t Sriracha

1t Honey

1t Lime Juice

Salt

Pepper

Mix everything. Adjust seasoning with salt and pepper.
